Vegan Bamboo Noodle Soup

Ingredients:
Bamboo shoots, shiitake mushrooms, corn, carrot, jicama (or radish), fried tofu, rice noodles, soy sauce, salt, and vegan seasoning.

How to make:

  1. Boil bamboo shoots 2–3 times, rinse well.

  2. Simmer jicama, corn, and carrot for 30 minutes to make a sweet broth.

  3. Add mushrooms, bamboo shoots, and season to taste with soy sauce and salt.

  4. Serve with rice noodles, fried tofu, and a sprinkle of pepper or green onions.
